Micro Bakery is an ethically sourced sourdough bakery specialising Ancient Grain Sourdough and complex viennoiserie at it shows respect to time honored technique protecting heritage craft, located in the idyllic Hertfordshire countryside in a small town called Much Hadham Micro Bakery shares this historical landscape with such influences as the Henry Moore Studios and the talented artists and guest scholars who share a like minded view, skill and passion to there chosen crafts at the Grandey's Place Heritage craft centre.
Heritage grains like Einkorn and Emmer and Rye have been cultivated for millennia—packed with nutrients, flavour and character alongside Ancient Grains such as Khoransan, Spelt and Solina which are utilized daily at Micro Bakery, we use a combination of local farmers alongside one of the United Kingdom's biggest Stone Mill operators Shipton Mill who date back to early 1900 and still operating with the original Stone mill and support numerous local organic independent farmers preserving Heritage and Ancient varieties of wheat in the modern farming practices, these varieties date back as far as 4000BC and are milled fresh daily to preserve maximum taste and health benefits.
